- Devote 30 minutes to chopping vegetables (hey, it’s relaxing), then portion and store in freezer bags to later steam or stir-fry.
- On weekends, cook a hearty batch of soup, chili or casseroles—then freeze to enjoy all week.
- Microwave a potato—top with salsa or fat-free yogurt for a healthy snack.
- Stock healthy, ready-to-cook supermarket entrees such as kebabs or fish.

Just saw your comment... You mentioned "melted cheese". I hope that didn't mean a "processed cheese" like Velvetta. Steer away from processed foods as much as possible.
Cheese IS good for you! IT's dairy and dairy is good for you - in moderation. It's essential to a good, well-balanced diet according to the Food Pyramid. I've creamed cottage cheese, chives and spices with my blender and added that to my baked potato. Gives you a big variety.
Use the purest of foods.
Eat MUFAs (monounsaturated fates - very good for you - nuts & seeds, olives, oils, avacado, and dark chocolate) with each meal or as snacks and you'll loose belly fat and see improvement with you health in general.
Since steering away from processed food and learning to make my own hummas, salad dressings, etc. my mental and physical health has improved considerably. I now like the natural "earthy" taste of things like raw potatoes. It's amazing how good foods are in their natural state! Good luck. And if I can help you with your efforts, just ask...

Cheese is 70% fat and certainly not healthy...in your body, it provides the right conditions that lets your body create opiate like substances. That's why it's such a feel good, comfort food. It contributes calories, pesticides, fat, and cholesterol to your "healthy" diet. Find some catsup or BarBQue sauce that isn't make with high fructose corn syrup and use that to flavor your potatoes. Put cooked vegies on top that you like. Cut them up and add seasonings and bake them as big "french fries" instead of plain potato. NO grease necessary. It plugs your pipes.

I would suggest if you can't do without the cheese then get 2%.

I love a baked potato! But I hate salsa and I hate yogart! I can sacrafice the butter.... but I thought cheese was suposta be good for you? I like melted cheese on my baked potato!
