Pesto Artichokes

You can’t just get your artichokes from spinach and artichoke dip, as delicious as it is. Sophie tells us that you just have to add two secret ingredients to this low-calorie, high-fiber veggie that will give you a great side dish, just as good as any dip. One ingredient is pesto... shhh. Remember, choose globes that are heavy, dark green and with tight leaves.

I was offered little in the way of information about using Coumadin for my husband.  it's a very tricky drug. To make a long story short, if you eat essentially the same way each day, i.e., have the same number of green veggies each day, like one yellow, one small green, and a small salad, you can regulate the dosage better.  My husband hates veggies but needs the vitamins so he gets a small (1/4 cup) dark green or regular sized portion of green beans plus the small salad and his level stays the same.  If you happen to like veggies, eat essentially the same amount each day and the Coumadin level can be raised (or lowered) if necessary.  Takes a while to regulate at first.  Another thing, if another Dr. prescribes a new medication (it was prednasone for my husband) ask your cardiologist first since the rheumatologist said nothing about any drug interaction, but I happen to be a nurse and get my magazines that enlightened me.  The cardiologist said take nothing before you check with me--including vitamins.  I just found out that Cod liver oil in vitamin D can interact with Courmadin.  Again, the other Dr. said nothing about it even though I pointed out he was on Coumadin.  You have to be your own advocate so you don't bleed out.  It was crazy-making the first year, but it's been level for a good while now.  There are a couple of good websites with lists of what's high on the list of Vitamin K foods so you can adjust accordingly.  it took awhile, but things are better now.  If you want more info that I have, get back to me with your e-mail addy and I'll send it to you.  Good luck with it--hang in there.  It works out after a while.

I was on Coumadin for 3 months and ate all the good greens in moderation and had no problems. If you are consistent, you should not have any rise in the INR.

I thought they said that these were the hated vegies/fruits.  I like all of these!  Where are the lima beans <gack!>, rhubarb <shudder> and beets <blech!!!>?  Can anything make those palatable without a lot of butter or sugar?
