Homemade Hummus
For a light, savory snack, our version of hummus and flat bread sure beats going to a Mediterranean restaurant for an $8 appetizer. Assuming that you have olive oil in your home, take a can of chickpeas (rinsed and drained), 3 tablespoons of olive oil, 1 teaspoon of cumin and 1 tablespoon of lemon juice, and mix in a blender until it reaches a smooth consistency. Toast a slice of flat bread, slice into pieces, and you’ve got a quick and easy afternoon snack.

What a great reference! Eating healthy can be intimidating b/c of the cost; it's nice to know you can do it for less.
