From Rice to Riches

Jayna

My rice cooker is seriously my at-home cook. Dinner can be as simple as throwing a cup of rice in the cooker and some vegetables in the steamer above. When theyre both done, I throw on soy sauce and garlic chili sauce for a bit of heat and flavor. If Im really lazy and cant spare the five minutes to chop vegetables and tofu, I just open a can of water chestnuts, drain them, and put them on the rice after its done steaming. The best part? It costs less than $1.50 per meal!

Tofu is not "highly bacterial", I don't know where you got that, unless you're using unpasteurized tofu which if you're buying them vacuum packaged at the grocery store, you are not. Of course it *can* harbor bacteria like most foods can if they are not properly stored. This is why you must completely submerge and change the water around the tofu daily if you are not using up the entire package at once, or else yes, bacteria can form.
